Carrot and Ginger Overnight oats - serves 2

Ingredients

1 cup of oats

2 cups of almond milk 

1 small grated carrot 

a teaspoon of grated ginger 

a small handfull of sultana's

Half a teaspoon OF CINNAMON

a squeeze of honey

A tablespoon of DESICCATED COCONUT

A PINCH OF SALT  

method

Mix all the ingredients into a container of your choice and leave in the fridge overnight.

serve with sliced banana and shredded almonds.

I sometimes add a scoop of recovery powder if i had a hard training session the day before. 

This recipe is also perfect for those cold, rainy mornings when you fancy something warm and cosy. you simply remove from the fridge and warm in a saucepan for two minutes. 

Peach and Raspberry Sweet Quinoa - serves 2

ingredients 

1/2 cup of Quinoa 

1 cup of almond milk 

a sprinkling of cinnamon AND NUTMEG

A DABBLE OF DESICCATED COCONUT

a HANDFUL OF ALMONDS

A HANDFUL OF RASPBERRIES

one PEACH - SLICED

2 TABLESPOONS OF YOGHURT. 

A squeeze of honey

method

aDD THE QUINOA, CINNAMOn, NUTMEG AND MILK to A SAUCEPAN AND BRING TO the BOIL.

reduce the heat, Cover and leave to simmer for 10/15 minutes, checking every few minutes to make sure it isn't over cooking.

SCOOP THE quinoa into 2 bowls. Add the coconut, almond, honey and yoghurt and mix together. top with RASPBERRIES and peaches. 

 


lunch

Avocado and Poached Eggs on Toast - serves 2

ingredients

2 slices oftoast

2 eggs 

half an avocado

salt

pepper

chilli power

pumpkin seeds

parmesan

method

Add water and a dash of vinegar into a saucepan and bring to the boil. crack the 2 eggs into the saucepan and let cook for 3/4minutes.

layer the sliced avocado, salt, pepper and chill powder on the toast.Remove the eggs with a slotted spoon and place on top of the avocado.

finish with pumpkin seeds and grated parmesan.

Cashew and Banana Omelette

ingredients 

1 banana

handful of cashews

3 eggs

milk

coconut oil

yohurt 

strawberries 

method

heat a frying pan and add a small amount of coconut oil.

once the oil is hot, add the cashews and sliced banana in the pan and cook until golden.

Whisk the eggs and a dash of milk together and place inthe pan with the cashews and banana's.

cook until crisp and golden. Enjoy with asqueeze of honey, dollop of yoghurt and some sliced strawberrise on top. 


Dinner

Steak Fajita's - serves 2 

ingredients

2 fillets of steak

1 red pepper

1 green pepper

1 red onion 

4 garlic gloves

4 tortilla wraps 

1 avocado

chilli power

salt and pepper 

lime  

PARMESAN CHEESE 

LETTUCE 

method 

heat the oven to 350 fahrenheit.  slice the steak, peppers, garlic and red onion into thin strips and season with salt, pepper, chilli powder and a squeeze of lime juice.

Oil a suitable tray for the oven and place the steak and vegetables in it before placing in the oven for 10/15 minutes (until the vegetables and steak are cooked through).

mASh TOGETHER the avocado, salt, peppeR, chill powder, garlic AND a squeeze of LIME.

Warm the tortillas by placing in the oven for a few minutes. Place the steak and vegetable's in the wraps with guacamole, grated parmesan and lettuce.
